We’ve been getting more and more into plant based food lately, partly because of the ethical stuff, but also because there are really exciting new recipe ideas appearing all the time. This year vegan bookings have taken off, so Natalie’s been spending time expanding her plant based repertoire. Not only have our vegan customers loved what Natalie’s come up with, she’s really enjoyed working in a new and creative way. In fact it’s been so successful that our own diets are now almost entirely vegan.
We’re also painfully aware of how difficult it is to get fantastic vegan food in France, especially tucked away in our village idyll in the Aveyron Gorge. Indulgent desserts seem to be especially hard to find, so that’s become one of Natalie’s specialities.
Perhaps Natalie’s greatest gift as a chef is her ability to combine bold flavours in unexpected but delightful ways. Her dishes rarely have a central “main event” around which various accompaniments cluster as is usual with meat dishes. Rather each dish has several components designed to work together without any stealing the show.
Don’t be fooled into thinking that Natalie’s just track down recipes from the furthest corners of the internet. Of course she’s influenced by what she reads and what other plant based chefs are producing, but all her work is marked by her own particular style, arrived at through endless experimentation and a restless desire for the new. Right now she’s exploring the use of aqua faba, nut creams and making vegan cheese.
She’s noticed a recent upsurge in high quality vegan food magazines and blogs in France, but has also noticed that the food they write about is rarely available outside of Europe’s capitals. Here in rural southwest France, vegans are too often condemned to eating plates of steamed vegetables devoid of any flavour. It’s getting easier, but there’s still has a long way to go. Natalie’s on a one woman mission to change all of that!
For this weekend we’re offering two nights accommodation in our award winning 16th Century Auberge, Le Cheval Blanc, a gourmet 3 course vegan meal on both evenings and and something pretty special for breakfast too! Weekends in St Antonin are always fabulous as one of the finest markets in the region is on our doorstep, so you’ll have time to enjoy soaking up the sights, sounds and smells of that before you head home.
