If you love food from around the world, this course is for you.

Many of the dishes we order in restaurants — fragrant curries, Middle Eastern mezze, Japanese dumplings or Mediterranean classics — seem difficult to recreate at home, especially without meat or dairy. But once you understand the techniques behind them, they become surprisingly achievable in a plant-based kitchen.

In fact, many of the dishes in this course started life in our own kitchen. When we became vegan we discovered that some of our favourite international dishes were either impossible to find in vegan form, or when they were available they were often disappointing. Sometimes they were dishes that could easily have been vegan — but weren’t.

Living in a small village in southwest France also means restaurant and takeaway options are limited. So we started recreating our favourite global dishes ourselves, adapting them carefully until they had the flavour, texture and satisfaction we were looking for.

This is genuinely how we cook and eat day to day. Some dishes are perfect for entertaining or special occasions, but many of them are on heavy rotation in our own kitchen — reliable favourites we return to again and again.

Some dishes are naturally vegan, while others I’ve carefully adapted and perfected over the years. Everything takes place in my large, well-equipped air-conditioned home kitchen, which people say has a wonderfully relaxed and convivial atmosphere.

We’ll be covering:

Day 1 — Indian Restaurant Favourites

Indian cuisine is one of the most naturally vegan-friendly food traditions in the world. On this day we’ll recreate rich, deeply spiced dishes you might expect to find in an Indian restaurant — the kind of food that delivers bold flavour, comforting textures and layers of aroma.

You’ll learn how to balance spices, build flavour in stages and create satisfying sauces and curries without dairy or ghee.

Expect dishes such as onion bhajis, fragrant curries, spiced vegetable dishes and freshly made flatbreads.

Day 2 — South-East Asian Restaurant Classics

We’ll explore the vibrant cuisines of this region as we dive into Japanese, Chinese and Malaysian restaurant favourites.

You’ll learn how to build deeply savoury broths, work with ingredients like soy, sesame, ginger and fermented sauces, and balance sweet, sour, salty and spicy flavours.

Expect dishes such as agedashi tofu, delicate dumplings like gyoza, fragrant noodle dishes and light coconut desserts.

Day 3 — Middle Eastern Restaurant Favourites

Middle Eastern cooking is all about flavour — vibrant herbs, warming spices and ingredients like sumac, za’atar, tahini and pomegranate molasses.

You’ll learn how these flavours work together to create the kind of dishes you might expect from a great Middle Eastern restaurant.

Expect dishes such as perfect falafel, vibrant tabbouleh, aromatic rice and lentil dishes and sweet or savoury pastries.

Day 4 — Mediterranean Restaurant Favourites

Fresh herbs, citrus and olive oil are at the heart of Mediterranean cooking.

You’ll learn how to balance acidity, richness and freshness — the foundations that make Mediterranean food so satisfying.

Expect dishes such as a beautifully creamy mushroom risotto, stuffed vine leaves, gnocchi with a rich vegan sauce, spinach spanakopita and a realistic tofu-based feta.

By the end of this 4-day, 5-night cooking holiday you will:

  • Create veganized versions of restaurant favourites.
  • Cook satisfying vegan food every day.
  • Have a toolkit of techniques for creating your own dishes.
  • Know essential vegan store-cupboard ingredients.
  • Be able to wow your guests — including omnivores.
  • Satisfy those cheese cravings.

  • 4 days of workshops in our air-conditioned kitchen
  • Accommodation for 5 nights (the course can be booked with or without accommodation)

How It Works

You’ll arrive on Monday and enjoy a simple evening meal. Workshops take place from Tuesday to Friday with breakfast provided each day. We normally finish around 3pm which leaves plenty of time to explore the village and the beautiful countryside around us.

This course can be booked with or without accommodation. Often we don’t have enough rooms to accommodate everyone in the house, so we’ve partnered with an excellent local B&B a very short walk away. All our rooms are single occupancy with en-suite bathrooms unless you book with someone you want to share with.

You are welcome to share your room with someone who isn’t doing the course. They are welcome to join us for breakfast each morning, and if they wish to join other meals there is a supplement payable at the time of booking.
