Our advanced vegan cookery course is the highest level programme we offer. It’s for you if you’re already a great home cook or professional but want to up your vegan game. You’ll leave a more sophisticated, creative cook who can create their own recipes and is able to wow with restaurant quality food presented to the highest standards. If you’re a professional looking to develop a vegan menu, you’ll leave with the knowledge and skills you’ll need.

 

This advanced vegan cookery course is quite intensive but is also a fun and sociable experience. It will provide you with more than recipes, you’ll also get a toolkit of techniques, tricks and theory which will enable you to make nutritionally balanced, visually stunning and delicious vegan dishes.  By the end of the course you will:

  • Know how to create healthy, balanced and satisfying vegan dishes full of flavour.
  • Be able to use vegan ingredients such as aquafaba and umeboshi.
  • Understand the principles and science behind flavour and flavour combinations
  • Know how to replace eggs and dairy particularly in vegan patisserie.
  • Be able to make sauces, foams and gels
  • Understand what ingredients need to be in your vegan storecupboard
  • Understand the specific challenges of making vegan food filling and satisfying
  • Be able to create beautiful dishes impeccably presented

 

The detail of what we cover depends on what’s good in the market that week but I’ll be including:

  • Meringues, mousses and cakes
  • Sauces, foams and creams
  • Homemade cheeses
  • Fermenting and pickling
  • Raw dishes
  • Packing flavour into tofu, seitan and tempeh

 

Included

  • Accommodation for 6 nights (This course can be booked with or without accommodation)

  • Lunch each day – in reality we’ll eat what we’ve cooked!
  • Simple meal on Sunday evening.
  • Station Transfers from Lexos or Caussade (Tarn et Garonne)

Not Included

  • Dinner (except on Sunday night).  There will always be leftovers you’re welcome to eat, but my experience of these workshops is that no-one’s hungry afterwards!
  • Airport transfers, although those can be arranged at extra cost. We can also tell you how to get here from Toulouse airport by train.

This course can be booked with or without accommodation. Often we don’t have enough rooms to accommodate everyone, so we’ve teamed up with an excellent local b&b a very short walk away which means that everyone who wants a room can have one. All our rooms are single occupancy with en suite bathrooms unless you book with someone you want to share with. You are welcome to share your room with someone who isn’t doing the course, and they are welcome to join us each day for a light breakfast. However if they want other meals, there’s a supplement to pay at the time of booking of €275. There is no supplement for people doing the course.
