Take your vegan french cookery to the next level with our Advanced French Cuisine course. Building on the foundational skills taught in our introductory French vegan cooking course, this program is designed for experienced home cooks and culinary professionals who want to create sophisticated, beautifully styled dishes that celebrate the artistry of modern French dining.

How This Course Fits:

If you’ve completed our original Vegan French Cookery Course, you already have a strong foundation in veganizing traditional French cuisine, including classic dishes and techniques. This next-level course takes those skills further, focusing on the contemporary, high-end dining trends seen in France today. While the original course is suitable for cooks of all levels, this program is tailored for those ready to explore elegant plating, refined techniques, and advanced flavor profiling. We’re running these courses back-to-back so that you can attend both in one visit. If you book both courses, we’ll offer you free accommodation for the weekend in between.

What You’ll Learn:

  • The Five Mother Sauces: Perfect vegan versions of velouté, béchamel, espagnole, hollandaise, and tomato sauce, exploring their use in both classic and modern interpretations.
  • Pâtisserie and Refined Desserts: Master pastry essentials, from crafting perfect quenelles to creating decadent mousselines and intricate tarts.
  • Pastry-Based Dishes: Experiment with sweet and savory pastries, including puff pastries, ‘cheese’ filled choux, and other classics reimagined for plant-based cooking.
  • Emulsions, Foams, and Tuiles: Learn advanced techniques to incorporate delicate foams, crisps, and luxurious emulsified sauces into your creations.
  • Flavour Profiling and Balance: Deepen your understanding of flavor notes and how to balance acidity, sweetness, bitterness, and umami for dishes that are complex and satisfying.
  • Elegant Plating and Presentation: Elevate your food styling to match the sophistication of high-end dining, with an emphasis on modern French aesthetics.

Not Included

  • Dinner (except on Sunday night).  There will always be leftovers you’re welcome to eat, but my experience of these workshops is that no-one’s hungry afterwards!
  • Airport transfers, although these can be arranged at extra cost. We can also tell you how to get here by train from Toulouse airport.

Our village, St Antonin Noble Val is a great place to spend time, especially if you’re into outdoor activities. Many of our guests extend their stay so that they can explore the region. We’re happy to do that when we have rooms available.

Please note that this holiday is normally non refundable, so we strongly suggest you take out holiday insurance at the time of booking. However we are happy to transfer your booking to someone else at no charge, or can try to sell your space. If we sell your space we will refund 90% of what you have paid. Can I share my room?

Two of our rooms accommodate two people and we also have a suite, Capucine, that can accommodate four. To book for more than one person, first choose the room you want to stay in then add additional people to your room. There are different prices depending on whether or not they will also attend the course. If you have any questions about this, please get in touch.
