Who Is This Vegan Patisserie Course For?

This course is designed for experienced home bakers and culinary professionals. You’ll dive into advanced pastry-making techniques suited to those looking to push their plant-based skills to a professional level.

What You’ll Learn

Foundational Techniques in Pastry-Making

  • Pastry Doughs: Learn the art of making perfect shortcrust, sablé, choux, puff, and fermented doughs.
  • Viennoiserie: Master the intricacies of vegan croissants, brioche, and filled pastries, achieving the delicate layers and airy textures without animal products.

Cakes and Entremets

  • Layered Cakes: Craft a selection of elegant entremets, featuring classic French cake bases and harmonious flavor combinations.
  • Classic Cakes: Master traditional cakes and techniques that will serve as a foundation for creating your entremets.

Creams and Fillings

  • Classic Creams: Prepare essential fillings including Chantilly, crème pâtissière, crème Alba, buttercream, and mousseline—all without dairy.
  • White Chocolate: Learn the basics of creating your own vegan white chocolate to use in decorating and as a base for fillings.

Presentation and Plating Skills

  • Decorative Techniques: Practice piping, making delicate tuiles, crafting intricate chocolate shapes and mirror glazing  for beautiful presentation.

  • 4 days of workshops in our air conditioned kitchen

Not Included

  • Airport transfers, although these can be arranged at extra cost. We can also tell you how to get here by train from Toulouse airport.
  • Alcohol other than what is provided with dinner on Sunday evening

Our village, St Antonin Noble Val is a great place to spend time, especially if you’re into outdoor activities. Many of our guests extend their stay so that they can explore the region. We’re happy to do that when we have rooms available.

Please note that this vegan patisserie holiday is normally non refundable, so we strongly suggest you take out holiday insurance at the time of booking. However we are happy to transfer your booking to someone else at no charge, or can try to sell your space. If we sell your space we will refund 90% of what you have paid. Can I share my room?

Two of our rooms accommodate two people and we also have a suite, Capucine, that can accommodate four. To book for more than one person, first choose the room you want to stay in then add additional people to your room. There are different prices depending on whether or not they will also attend the course. If you have any questions about this, please get in touch.
